How to Make Coffee with a Chemex®

    What you’ll need:

    • Chemex® coffee maker
    • Chemex® coffee filter
    • Pour-over (gooseneck) kettle
    • Mug/Cup
    • Water
    • Tablespoon
    • Scale
    • Your favorite ground Cafe Leyenda coffee, like the Columbian Blend

    Water to coffee ratio:

      • 9 tablespoon medium ground coffee per 24 fluid ounce water (45 gram per 720 milliliter)

      Instructions:

      1. Place the Chemex® filter into the brewer. Make sure to leave the thick three-layered side facing the spout.
      2. Wet the filter with hot water. Thoroughly wet the filter to preheat your brewer. When discarding the water, pour it away from the spout.
      3. Place the Chemex® coffee maker on the scale. Add medium ground coffee. Use 9 Tbsp (45 g) of ground coffee for every 24 fl oz (720 ml) of water. Tap gently to even out the grounds and set the scale to zero.
      4. Slowly pour a bit of water onto the grounds Stop when all the grounds are saturated. Wait 30 seconds to let the coffee bloom. (Blooming helps the coffee release natural fragrances, giving it a fuller flavor.)
      5. Slowly pour more water. Starting in the center of the brew bed, slowly pour a pencil-thin stream of water, spiraling outward. Stop when 2⁄3 of the water has been poured.
      6. Wait for 20 seconds. Pause for 20 seconds as the coffee brews, then continue pouring the rest of the water.
      7. Let the coffee drip through. When the coffee stops dripping, discard the filter and gently swirl to experience the nuanced aroma.
      8. Pour & enjoy your coffee at home!

      Quick Tips:

      If there’s a thick layer of grounds on the sides of your filter, try different pouring techniques and make sure your pour is even.
